Varying quantities of harmful substances may be present in foodstuffs, originating from raw materials, packaging materials or resulting from the cooking process. Evira examines and supervises the occurrence of harmful substances in foodstuffs and participates in legislative work in the EU on contaminants. Legislation sets maximum levels for harmful substances, which must not be exceeded. Maximum levels are set and supervised in order to ensure that products do not pose a risk to consumer health. If necessary, the authorities issue consumption recommendations for the entire population, or for special groups only
